What’s for dinner?

722716_thbI’m at the point now where I ask myself that question almost on a daily basis. I think it’s safe to say that this has become a really bad habit. I’ve run out of ideas and I’m bored with what I make. Pasta. Chicken. Fish. Repeat. I like to shop for fresh veggies and meats, but end up throwing a lot of it away because with only two people we just don’t get to all of it. I hate wasting food. In a perfect world I would have the energy to plan our meals each week — a variety of healthy dishes that taste delicious and are effortless to prepare. I would make batches of things and freeze them. But sadly, I don’t do these things. On nights when my husband works late I usually just pour myself a bowl of cereal and call it a day. Now that I’m introducing solids into my daughter’s diet I need to work on my culinary skills and get organized. I want her to develop healthy eating habits right from the start and I know that I’m the one responsible for establishing that. I wish cooking didn’t feel like such a chore though. Maybe I should take a class. What are you having for dinner?

    Here’s a suggestion, I usually buy a whole roasted chicken or two on days that my store has a special on them. We’ll have a roast chicken dinner one night with some vegetables and the next night I’ll use the other chicken/ leftovers for another dish. Shred up the chicken and make chicken soft tacos, or shred it up and make soup like chicken vegetable, chicken noodle, chicken tortilla or chicken and dumpling. Using an already cooked chicken and getting vegetables that are ready to use in the produce section keeps cooking to a minimum and you can have dinner in 15 minutes!
    Since you said you like to buy fresh veggies and sometimes they go to waste, try making a veggie stirfry or roasting them or even easier chop them up and make a vegetable soup. Hope these ideas help with a few dinners.

    Wow! Great ideas Julie. Thanks! I never think to buy those chickens in the grocery store. I love that there’s no prep or cooking time and clean-up should be a breeze. I’ll give it a try. Making soups is another great idea. It’s a great time of year for soup and they can be really healthy too. Thanks again!!
